Cassava Flour Pancakes

Serving : 10 Pancakes
Ingredients
- 1 1/2 Cups (110g) – Wellnesscultz Cassava Flour
- 1 tbsp of Baking Powder
- 1/2 tsp of Salt
- 3/4 Cups of Milk (Dairy or Dairy Free)
- 2 Eggs
- 2 tbsp of Melted Butter or Oil
- 1 – 2 tsp of Vanilla
Note: You may replace Tapioca Starch with Cassava Flour on this recipe, however a texture could be slightly different. This recipe is with No added Sugar as Cassava Flour itself gives you a unique taste. However, if you prefer sweeter pancakes you may add 1 – 2 Tbsp of Sugar, based on your taste preferences.
Directions
- In a large bowl, sift Cassava Flour together with Baking Powder and Salt – Set aside.
- Ina separate bowl, mix Eggs, Milk, Melted Butter, and Vanilla together and mix well. Then add the flour mixture and mix until there are no visible lumps.
- Let the mixture sit for 5 minutes.
- Heat a non-stick pan for 1 – 2 minutes in medium flame, and apply little butter/oil.
- Pour 14 cups of the batter per pancake into the pan – wait until bubbles are visible. Flip the other side and cook for another 1 – 2 minutes until light brown surfaces are visible. Repeat the process.
- Serve with any topping (Honey, Maple Syrup, Chocolate Sauce, and Peanut Butter with any type of Fruit for better taste).
Note 1: For fluffy pancakes, separate egg whites and beat them until formy and add to the batter as the last and fold them together gently.
Note 2: The same batter can be used to make sweet Cassava Flour waffles as well.
