Gluten-Free Vanilla Muffins / Coconut-Vanilla Muffins

Total Time : 30 Mins Approx
Serving : 12 Muffins | Size 11 Target Cup Cake Liners
Ingredients:
- Wellnesscultz Gluten-Free Vanilla Cake Mix – 305g
- Melted Butter – 150g
- Eggs (Large) – 3
- Vanilla – 1 Tsp
- Butter Milk – 1/4 Cups to ½ Cups approx.
- (Fresh Milk 1/4 Cups + 1.5 Tsp Vinegar)
Method:
- Pre-heat the oven to 350F / 175C for 10 mins
- Sieve the flour blends and remove all the lumps/clumps if any.
- Mix all wet ingredients
- Pour the wet mix to the flour blend and whist / mix until well combined (No lumps/clumps)
- Distribute the batter among 12 cup cake / muffin liners pre-prepared.
- Tap to remove air bubbles.
- Keep the tray on the center rack and bake at the same temperature for 12 to 15 minutes or until the tooth pick comes out clean.
Notes:
- For coconut vanilla cake / muffins add ½ Cup desiccated coconut to the batter and add 2 Tbs Milk.
- Advised to use ¼ Cup milk first and if the batter to too thick to add the balance little by little
