Prepare the Dough
In a large bowl, combine the Cassava Flour, scraped coconut, and a pinch of salt. Gradually add the water, mixing little by little until a soft, smooth dough forms. Adjust the flour as needed to achieve a workable consistency.

Shape the Rottis
Divide the dough into 20–25 equal portions and roll each into a ball. Flatten each ball using a rotti press or rolling pin between two lightly greased baking sheets to create evenly shaped rottis.

Cook the Rottis
Heat a rotti maker or non-stick pan over medium heat. Cook each rotti for about 2 minutes per side, turning until lightly golden brown and fully cooked.

SPECIAL NOTE
Small rottis are easier to handle and cook evenly with cassava flour. For extra flavor, mix finely chopped onion and green chilli into the dough before shaping the rottis.
