Preheat the Oven
Preheat the oven to 175°C (350°F) for 10 minutes to ensure an even baking temperature before preparing the batter.

Prepare the Muffin Tray
Line a 12-cup muffin tray with Size 11 cupcake liners and set it aside for easy filling.

Prepare the Dry Ingredients
Sieve the Wellnesscultz Gluten-Free Vanilla Cake Mix into a large mixing bowl to remove any lumps and create a lighter texture.

Mix the Wet Ingredients
In a separate bowl, whisk together the melted butter, eggs, vanilla extract, and ¼ cup of buttermilk until smooth and well combined.

Make the Batter
Pour the wet mixture into the cake mix and whisk gently until no lumps remain. If the batter appears too thick, gradually add the remaining buttermilk until a smooth, thick batter forms.
For Coconut-Vanilla Muffins, fold in the desiccated coconut and the additional 2 tablespoons of milk at this stage.

Divide the batter evenly among the prepared cupcake liners, filling each liner about three-quarters full. Gently tap the tray on the countertop to release trapped air bubbles.

Place the tray on the centre rack of the oven and bake at 175°C (350°F) for 12–15 minutes, or until the tops are lightly golden and a toothpick inserted into the centre comes out clean.

Allow the muffins to rest in the tray for a few minutes before transferring them to a wire rack to cool completely.

SPECIAL NOTE
Start with ¼ cup of buttermilk and only add more if the batter is too thick. Since every oven bakes differently, begin checking the muffins after 12 minutes using the toothpick test to prevent overbaking.
