Cassava Flour Spicy Waffles

Serves : For 4-6 Waffles

Ingredients

  • 1 1/2 Cups (110g) – INGROW Cassava Flour 
  • 1 tbsp of Baking Powder 
  • 1/2 tsp of Salt 
  • 3/4 Cups of Coconut Milk – Mild Thick 
  • 2 Eggs 
  • 2 tbsp of Melted Butter or Oil 

Note: You may replace Tapioca Starch with Cassava Flour on this recipe, however a texture could be slightly different.

Directions

  • In a large bowl, sift Cassava Flour together with Baking Powder and Salt – Set aside. 
  • In a separate bowl, mix Eggs, Milk, Melted Butter, and Vanilla together and mix well. Then add the flour mixture and mix until there are no visible lumps. 
  • Let the mixture sit for 5 minutes. 
  • Heat the waffle iron for 1 – 2 minutes and apply little butter/oil. 
  • Pour 1/2 cup (depend on the size of the waffle oven) of the batter per waffle and cook until properly cooked 
  • Serve with any cooked curry / sambol or preferred spicy jams or toppings.
